Recipe: Potatoes with Huancaina Sauce
Recipe for 2 people.
Ingredients
- 3 medium size potatoes
- 1 pound of chesse (white chesse)
- 2 Yellow hot peppers
- 1 cup evaporated milk
- 1/2 cup vegetable oil
- 1 clove garlic
- 8 saltine crackers
- 3 eggs
- lettuce
- salt and pepper
- parsley
Preparation
- Boil the potatoes together with eggs for 20 minutes until potatoes are done, then peel all and set aside.
- Remove seeds (if desired) from yellow pepper, wash and set aside.
- Chop parsley.
- Prepare a salad plate with a lettuce base and set aside.
- In a blender, at medium speed make the sauce with the milk, pepper, saltines, chesse, garlic, oil, salt and pepper to taste.
- In plate place thick slices of potatoe on the lettuce base followed by generous layer of sauce.
- Place slices of boiled egg, slices black olives, and sprinkling of chopped parsley.
